Summer temperatures invite us to spend more time outside, soaking up the sun, and enjoying time with family and friends. The carefreeness of summer also calls for simplicity when it comes to planning meals. Cooking meals at home is always a healthier and less expensive option. Studies have also shown that when you regularly prepare home-cooked meals, you’re also more likely to make healthier choices on those occasions when you do eat out. In other words, eating healthy food can become a habit. Seasonal eating encourages you to focus on in-season fruits and vegetables and helps promote nutritious meals and supports a healthy environment. Try to incorporate seasonal produce in your dishes when planning your meals!

Lemon Vinaigrette Pasta Salad

Prep Time: 15 minutes Total Time: 30 minutes Servings: 8 

 Ingredients

  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 pressed garlic clove
  • 1/3 cup extra-virgin olive oil
  • 8 ounces pasta, cooked and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium English cucumber, halved
  • 3 tablespoons chopped fresh basil
  • 3 tablespoons chopped fresh dill
  • 3 tablespoons chopped fresh chives
  • 3 tablespoons chopped fresh flat-leaf parsley

Instructions

  1. Whisk together lemon juice, lemon zest, Dijon mustard, honey, kosher salt, black pepper, and garlic clove in a small bowl; slowly whisk in extra-virgin olive oil.

  2. Stir together pasta (cooked, drained, and rinsed with cold water), halved cucumbers, halved cherry tomatoes, and chopped fresh basil, chives, dill, and flat-leaf parsley in a large bowl. Add vinaigrette, and gently toss to combine. Serve at room temperature, or cover and chill.

Sweet Summer Peach Salsa

Prep Time: About 20 minutes, Makes a large bowl

Ingredients

  • 1.5 pounds of tomatoes, diced
  • 2 bell peppers, diced
  • 2 jalapenos, finely diced
  • 1 medium onion, diced
  • 1 pound of peaches, pitted and diced
  • 1/2 bunch fresh cilantro, minced
  • 2 tablespoons lime juice
  • 1/4 teaspoon black pepper

Instructions

1. In a large bowl, combine the tomatoes, bell peppers, jalapenos, onions, and peaches.

2. Add the cilantro, lime juice, and black pepper to the mixture. Mix well.

3. Serve immediately, or chill for 1-2 hours to let the flavor develop.

Summer Berry Cobbler

Summer Berry Cobbler
Use a mix of sweet summer berries to make this cobbler stand out. The buttery cake-like base sets this cobbler apart from others. Top with a cardamom-spiced whipped cream or your favorite vanilla ice cream.

Ingredients

  • 4 cups mixed berries
  • 2 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup milk
  • 12 cup butter, melted
  • 12 cups sugar, divided
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 12 teaspoon salt
  • 2 cups heavy whipping cream
  • 1 tablespoon confectioners’ sugar
  • 1 tablespoon ground cardamom

Instructions

Preheat oven to 350°F.

Place berries in a large mixing bowl. Add 1/2 cup sugar, lemon juice and zest. Stir until well combined. Set aside to rest for about 5 minutes.

Meanwhile, place milk and butter in a microwave-safe container and cook on HIGH just until butter is melted, about 1 minute. Stir until well combined. In a medium mixing bowl, whisk together flour, remaining 1 cup sugar, baking powder and salt. Gradually pour in milk and butter mixture, whisking until smooth.

Pour batter into a 13-x 9-inch baking dish, then spoon berries evenly on top. If desired, sprinkle top with about 2 tablespoons of sugar. Bake at 350° for 45-50 minutes or until crust is golden brown. While cobbler is baking, pour the heavy cream into a non-reactive metal or glass bowl. Add confectioners’ sugar and whip on medium speed with electric mixer until soft peaks form. Sprinkle in cardamom and whip again until stiff peaks form. Cover and refrigerate until ready to serve. Serve cobbler warm or at room temperature with the spiced whipped cream.

*Suggestions – Prepare in individual mini cast iron skillets or ramekins for easy summer entertaining.
