Apples are an original fast food, only requiring a good wash before eating. They’re delicious, affordable and hold up well in backpacks. As an ingredient, apples add texture and flavor. They make a great addition to tuna or chicken salad, green salads, slaw, grilled-cheese sandwiches, yogurt, oatmeal, pancakes and more!
North Carolina ranks 7th nationally in production, with the majority of harvest in the Western part of the state. Peak harvest is mid-August through October, so there’s still time to discover a lesser-known variety at an apple orchard or farmers’ market.

Apple Slices with Date Sauce and Roasted Pecans
- ½ cup finely chopped roasted pecans
- 1 cup pitted dates
- 1/3 cup water
- Apples of choice, sliced into 1/ 2-inch wedges
- Roast the pecans. Either constantly stir them in a skillet over medium high heat or preheat an oven to 300° and roast them in a baking pan. Check them after 8 minutes, then often to avoid overcooking.
- Add dates and water to a blender or food processor and blend on high until smooth. For the smoothest dip, use a smoothie blender if you have it. Transfer to a bowl.
- Spread date sauce on one side of the apple slice and top it with roasted pecans.
